Catfish Perlow Recipe for Bullhead Catfish

Prep Time: 15 minutes
Cook Time: 30-40 minutes
Ingredients: 3 chopped onions
3 minced cloves of garlic
1 cup chopped ham
1 tbsp oil
1 chopped green pepper
1 16 oz can of stewed tomatoes
salt
pepper
thyme
2 bay leaves
Tabasco sauce
2 cups white rice
4 small cleaned bullheads
water
Directions: Saute the onions, garlic, and ham in oil in a pot that has a lid ( leave the lid off for now).

When lightly browned add the green pepper and can of tomatoes, simmer 10 minutes. Add salt,pepper, and thyme to taste, 2 bay leaves and a good dose of Tabasco sauce.

to this add 2 cups white rice and cover with 1/2 inch of water and bring to a boil. Drop in the bullheads. Stir the fish in, put the lid on, reduce heat and cook 20 minutes or so until rice is done.
Other Notes: A perlow is similar to the jambalaya of Louisiana but it is from the Georgia-North Carolina region.
